- 6 eggs 1/4
- 1/4 cup heavy cream
- 1/2 cup shredded cheese (Cheddar, Mozzarella, etc.)
- 4 slices bacon
- 1/4 cup chopped spinach
- 1/4 cup chopped tomatoes
- Salt and Pepper to taste
Preheat your oven to 350°F (175°C). Lightly grease the muffin tray with cooking spray or oil to prevent sticking.
In a mixing bowl, beat the eggs and heavy cream together until well combined. Season with salt and pepper.
Sprinkle a little shredded cheese, crumbled bacon, chopped spinach, and chopped tomatoes into each muffin cup, distributing evenly.
Carefully pour the egg mixture on top of the ingredients in each muffin cup, filling about 3/4 full.
Place the muffin tray in the oven and bake for 20-25 minutes, or until the egg bites are set in the center and lightly golden on top. If you want them particularly moist, you can use a water bath method by placing the muffin tray in a larger pan filled halfway with water.
After removing from the oven, let the egg bites cool for about 5 minutes before using a knife to loosen them from the tray and serve. Enjoy your delicious keto egg bites with a burst of tomato flavor!
