Keto Quiche with Almond Crust

I'm excited to share my delicious and easy-to-make keto-friendly quiche recipes with you! You can customize the ingredients of the filling just to your liking. For extra protein add meat like ham or fish like salmon.

Ingredients
  

For Almond Crust

  • 1 cup almond flour
  • 1/4 cup melted butter
  • 1 egg
  • pinch of salt

For Quiche Filling

  • 1 cup cherry tomatoes, halved
  • 1 cup mushrooms, sliced
  • 1 cup fresh spinat, chopped
  • 6 eggs
  • 1/2 cup heavy cream
  • salt and pepper to taste
  • 1 cup additional shredded cheese (for me a must-have 😉)

Instructions
 

Almond Crust

  • Preheat your oven to 350°F (175°C).
  • In a bowl, mix almond flour, melted butter, a beaten egg, and a pinch of salt until it forms a dough.
  • Press the dough into a pie dish, covering the bottom and up the sides.
  • Bake the crust for 10 minutes until lightly golden.

Quiche Filling:

  • In a skillet, sauté mushrooms until they release moisture. Add spinach and cook until wilted.
  • In a separate bowl, whisk together eggs, heavy cream, salt, and pepper.
  • Spread the sautéed veggies over the almond crust, pour the egg mixture on top, and add halved cherry tomatoes.
  • If desired, sprinkle shredded cheese on top.
  • Bake for 25-30 minutes or until the quiche is set and golden brown.
  • Allow it to cool for a few minutes before slicing.
